Pasta al Limone


This one is for the lemon lovers! A super simple, light, and creamy sauce perfect for summer!

This three-ingredient sauce is so fresh and summery yet buttery and smooth like a pasta sauce is meant to be. An intense lemon flavour is perfectly balanced by the rich butter and salty fresh parmesan. Perfect with fettuccine or spaghetti but would also pair wonderfully with my roasted garlic and herb mini ravioli. With only a couple simple ingredients coming together in only a few minutes, you will be amazed at the elevated and gourmet dish you create!

Ingredients


  • 2 servings of pasta of your choice (fettuccine, spaghetti, mafaldine, or roasted garlic and herb ravioli)

  • one large lemon (zested and juiced)

  • 1/3 cup salted butter

  • 1/3 cup reserved pasta water

  • 1/3 cup freshly grated Parmigiano Reggiano


Directions


  1. Melt butter in skillet on medium low heat.

  2. Add pasta to salted boiling water and cook according to package instructions.

  3. Add lemon juice, zest, and rind to melted butter and let simmer on low heat.

  4. Transfer cooked pasta to lemon butter sauce and add freshly grated parmesan and pasta water and toss together over medium low heat until a creamy sauce perfectly clings to the pasta.

  5. Plate pasta and top with fresh cracked pepper, more freshly grated parmesan, and fresh basil (optional).

  6. Serve and enjoy!
